Job Description

Job Summary:

The Sushi Chef will be responsible for the creation and execution of all sushi offerings at Casa Tua. This includes menu development, preparation, presentation, and maintaining the highest standards of quality, freshness, and technique. The ideal candidate will bring creativity, precision, and deep knowledge of Japanese culinary traditions, while also aligning with the Casa Tua ethos of elegance and excellence.

Key Responsibilities:
  • Prepare and present sushi and sashimi with an emphasis on artistry, precision, and quality.

  • Oversee all sushi bar operations, including mise en place, fish breakdown, and daily prep.

  • Ensure all ingredients, particularly seafood, meet the highest standards of freshness and sustainability.

  • Maintain cleanliness and hygiene of all sushi stations in accordance with food safety regulations.

  • Manage inventory of sushi-related ingredients and tools; monitor stock levels and coordinate with purchasing.

  • Educate and train junior staff on proper sushi techniques, knife skills, and product handling.

  • Interact with guests when appropriate, delivering a personalized and engaging dining experience.

  • Uphold consistency in flavor, texture, and visual presentation in every dish.

Requirements:
  • Minimum 1 year of professional experience as a Sushi Chef in a fine dining or omakase-style restaurant.

  • Mastery of sushi and sashimi preparation, knife handling, and fish butchery.

  • Deep knowledge of traditional Japanese ingredients and modern sushi trends.

  • Strong sense of aesthetics and attention to detail in plating and presentation.

  • Commitment to ingredient integrity and seasonal menu development.

  • Proven track record of kitchen cleanliness, organization, and food safety compliance.

  • Excellent communication and teamwork skills.

  • Passion for hospitality, innovation, and continuous learning.
